Vegan Banana Bread



Banana Bread

3 ripe bananas
1 tbsp. lemon juice
1/2 cup oil
1/2 cup sugar
3/4 cup dates, chopped
1 1/2 cups flour
1/2 cup wheat germ
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda

Preheat oven to 375F. In a small bowl, stir together the mashed banana, lemon juice, oil, sugar, and dates. In a separate large bowl, stir together the flour, wheat germ, salt and baking powder and soda. Add the banana mixture to the flour mixture and stir gently until just mixed. Spoon into a lightly oiled 9" loaf pan and bake for 40-50 minutes. Until a toothpick inserted in center comes out clean. Makes 1 loaf.
