White Bean Salad



1/2 cup canned white beans, rinsed & drained
2 tbsp. coarsely chopped fresh tarragon
2 tbsp. coarsely chopped fresh parsley
1 small carrot, cut into matchsticks
1/2 cucumber, cut into matchsticks
2 red radishes, trimmed, cut into matchsticks
2 tbsp. fresh apple juice
1 tbsp. apple cider vinegar
1 tbsp. toasted sunflower seeds
1 tbsp. toasted pepitas (pumpkin seeds)

Toss all ingredients except the seeds, sprinkle on when serving.
